Harvest and production
Obtained from olives collected mechanically in the first decade of October. The extraction is made on the same day and using a percolator in order to maintain a low acidity and safeguard the sensorial characteristics of the olive oil.

Description
Golden yellow with green highlights. Intense, persistent, fresh and vegetal scents, of fresh olive, green apple, tomato and dried fruit. On the palate it is harmonic, spicy and pleasantly bitter in the long finish which recalls tones of artichoke and thistle.
